Zunda Mochi (Sweet Edamame Mochi)

Zunda Mochi is a Japanese confectionery of glutinous rice cakes topped with a sweet paste of mashed edamame (young soybean). This chewy, stretchy dessert is a popular specialty of Japan's Miyagi Prefecture where it‘s served at afternoon tea and celebrations alike.

  1. Gather all the ingredients.
  2. Add frozen edamame in boiling, unsalted water.
  3. Cook on medium heat for 15–20 minutes until tender. They should be softer than regular edamame you eat as a snack. Drain the water.
  4. Discard the pods.
  5. Using your fingers, push the edamame to remove the thin outer skin.
  6. Roughly chop the edamame with the knife (this will facilitate the next step) and transfer to suribachi.
  7. Crush and grind the edamame, leaving some pieces chunky.
  8. Add the sugar and blend.
  9. Add the salt and blend. Salt brings out more flavor without further adding more sugar. Add a little bit of water to make it softer.
  10. Cook the rice cakes in boiling water for 4–5 minutes.
  11. Remove from the boiling water. Transfer to a plate.
  12. Using chopsticks, gently spread out the cooked mochi a bit. Top with the sweet edamame. Serve immediately.
