Lemon Cake Mix Cookies

1. Preheat the oven to 350°F. Line baking sheets with parchment paper.
2. In a large bowl, stir together all of the ingredients until well-combined.
3. Shape the cookie dough into 1-inch balls and place them on the prepared baking sheets, 2-inches apart. Use the bottom of a glass to press down on each ball to flatten.
4. Bake 9 to 12 minutes, or until light golden brown at the edges. Cool for a few minutes, and then move to a rack to cool completely.
