  1. Heat ½ tablespoon of oil in a large skillet or wok over medium heat. Add the beaten eggs and pepper, scrambling until set but still glossy. Transfer to a bowl and set aside.
  2. Add 1 tablespoon of oil to the skillet and turn the heat to medium-high. Once the oil is hot, add the diced ham and cook for 2-3 minutes, until golden.
  3. Turn the skillet down to medium and stir in the garlic and the white parts of the green onions. Cook for 1 minute. Add the frozen vegetables and cook for 2 to 3 minutes more, or until just tender.
  4. Increase the heat to medium-high and add the remaining 1 tablespoon of oil and the cold rice. Stir it together and then let it cook undisturbed for a few minutes or until browned on one side. Stir occasionally until the rice is lightly browned and crisped, about 7 minutes.
  5. Add the scrambled egg, soy sauce, sesame oil, and half of the green onion tops. Stir to combine and heat through.
  6. Garnish with the remaining green onions.
